Chicken with lemon and olives

Ingredients:

500-600g of chickens, cleaned and bound
200 ml olive oil
1 onion, finely chopped
1 clove garlic, finely chopped
1 tbsp. ground ginger
½ tbsp. cumin
2 pinches of saffron
1 liter of water
500g green olives, pitted
3 onions, finely chopped
1 tbsp. sweet paprika
100 ml of lemon juice

Preparation :

In a large saucepan, place the chicken and add the oil, garlic, ginger, cumin and saffron.
Cover with water and season with a little salt.
Cover and cook for 30 minutes over low heat.
Add olives, onions and paprika.
Cook for another 30 minutes; then fill with the lemon juice.
Serve with sauce.
